2 egg yolks
1 ¾ cups sugar
16 ounces cream cheese, softened
40 slices bread
1 lb. margarine, melted
4 teaspoons cinnamon
Recipe
Beat egg yolks and 1/2 cup sugar together; stir in cream cheese until
smooth. Trim crusts from bread; flatten each slice with a rolling pin.
Spread cream cheese mixture on a slice of bread; top with another
slice to make a sandwich. Cut into quarters lengthwise into 4 logs.
Melt margarine.
Mix cinnamon and remaining 1 1/4 cups sugar in a bowl. Dip each log in
melted margarine, and then in cinnamon sugar. Place on rimmed cookie
sheets.
Before baking logs, freeze them on rimmed baking sheets; then put in
freezer bags. To serve, remove as many as needed from the bag. Bake
in a preheated 400 degreeoven for 10 minutes.
Makes 80 to 100 logs.
Authors Comments: These were fairly messy to make and took more time
than I thought it would. I opted to leave on the crusts, but I think
the crustless would present a more visualy appealing treat, my family
could care less, so I opted to go crustful. I made 3 "logs" so they
were fairly thick logs. The taste reminds me of "elephant ears" you
get at the fairs and carnivals.
