Freezer Apple Pie Filling

12 lbs apples
3 cups sugar
2/3 cup quick tapioca
lemon juice
4 teaspoons cinnamon
1 teaspoon nutmeg
Recipe
wash peel core and chop apples into lemon juice and water turning to
coat as you go.
drain the apples.
in very large pan combine the apples with the above ingredients, stir
to mix and coat all the apples. set aside for 20-30 minutes,while
stirring occassionally to mix again.then,
cook over medium heat until the filling starts to thicken. set aside to
cool. when cool package into 1 quart jars or freezer baggies and
freeze.( be sure to leave headspace for expansion) yields approximately 6-7
quarts.
