    1 pound extra lean ground beef
    1/2 cup bread crumbs
    1/2 cup barbecue sauce
    1 egg
    Parmesan cheese, a few spoonfuls

    Combine 1 pound extra-lean ground beef with 1/2 cup each of bread
    crumbs and barbecue sauce, 1 egg and a few spoonfuls of grated
    Parmesan cheese. Roll into even-sized balls and place on baking
    sheet. Bake at 400ºF for 20 minutes, until meatballs are cooked
    through.

    Tip: Bake a batch of these meatballs in advance and store them in
    your freezer. Our Saucy Meatball Supper also can be made ahead of
    time and stored in a freezer bag until needed.

    Last-Minute Meatball Sandwich

    Cook you favorite vegetables (try onions, peppers and mushrooms) in a
    skillet with a bit of oil. Add cooked meatballs, as many as you like,
    and barbecue sauce-enough to coat all the ingredients. Cook until
    meatballs are warmed through. Place meatballs and vegetables in an
    open Italian-Style bun; sprinkle with shredded Cheddar cheese. Place
    under broiled just until cheese melts.

    Saucy Meatball Supper

    Mix 1 cup each of spicy barbecue sauce and your favorite frozen juice
    concentrate (thawed). Add 1 tablespoon soy sauce and a pinch of
    ground ginger. Pour over cooked meatballs (about 4 or 5 per person)
    and heat through in a skillet over medium-high heat. Serve over rice.
