usually corn chips are made with masa..this is a great way
to use up cornmeal from your pantry
List of Ingredients
3 c. flour
1 c. yellow cornmeal
4 tsp. baking powder
1 Tbsp. shortening
1 egg, beaten
1 c. water
oil
Recipe
Up to 1 week or day before serving: In large bowl
mix flour, cornmeal and baking powder. Mix in
shortening with fork. Stir in egg and water to form a
stiff dough.
Knead 5 minutes. Divide into 4 parts. Roll each into a
10-inch square,
about 1/8-inch thick; cut into 2 inch squares.
Divide each square into 2 triangles. Fry in 1-inch hot
oil (about 360
degrees) about 2 minutes or until golden on both
sides.
