    Lemon Pie-Filling Mix

    2 1/2 cups presweetened powdered lemonade mix
    1 cup cornstarch -- plus 2 tablespoons
    1 1/4 cups sugar -- (or more if desired)
    1 teaspoon salt

    Recipe



    In a medium bowl, combine lemonade mix, cornstarch, sugar and salt.
    Mix well. Put in a 1-qt airtight container. Label with date and
    contents. Store in a cool, dry place. Use within 6 to 8 months.
    Makes about 4 1/4 cups LEMON PIE-FILLING MIX.

    Hot Lemon Sauce (Lemon Pie-Filling Mix)
    1 cup water
    1/4 cup Lemon Pie-Filling Mix -- (see recipe)
    2 tablespoons butter or margarine

    Combine water and Lemon Pie-Filling Mix in a small saucepan. Bring to
    a boil over high heat, stirring constantly. Remove from heat. Add
    butter or margarine and stir to melt. Serve warm over gingerbread,
    pound cake, apple pie, steamed pudding and other desserts.
