Oatmeal Cookie Mix

List of Ingredients
4 cups all-purpose flour
4 cups whole-wheat flour
4 tsp salt
2 tsp baking powder
2 tsp baking soda
6 cups brown sugar, firmly packed
3 cups vegetable shortening
8 cups quick oats
Recipe
Combine both flours, salt, baking powder and baking soda. Blend
well. Stir in brown sugar. Cut in shortening until evenly distributed.
Stir in oats until well mixed. Put in a large airtight container and
store in a cool dry place. Makes about 24 cups of mix.

OATMEAL RAISIN COOKIES
6 cups Oatmeal Cookie Mix
2 eggs, beaten
1/2 cup milk
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1 cup raisins
1/2 cup chopped nuts (optional)
Preheat oven to 350ºF. Lightly grease baking sheets. Put Oatmeal
mix in a large bowl. Add beaten eggs, milk, cinnamon, nutmeg and
cloves. Blend well. Stir in raisins (and nuts if using). Drop by small
spoonfuls 2 inches apart on prepared baking sheets. Bake 12-15 minutes, until
edges are browned. Makes approx 48 cookies.
PEANUT BUTTER & HONEY COOKIES
2 cups Oatmeal Cookie Mix
1/2 cup chunky-style peanut butter
1/3 cup honey
1/2 tsp vanilla
Preheat oven to 375ºF. Lightly grease baking sheets. Combine all
ingredients and blend well. Drop by small spoonfuls 2-inches apart on
prepared baking sheets. Bake 10-12 minutes, until edges are browned.
Makes about 30 cookies.
OATMEAL CHIPPERS
2 eggs, beaten
1/2 cup milk
2 tsp vanilla
6 cups Oatmeal Cookie Mix
6 oz semisweet chocolate chips
1/2 cup chopped nuts (if desired)
Preheat oven to 350ºF. Lightly grease baking sheets. In bowl,
combine beaten eggs, milk, vanilla and Oatmeal Mix. Stir in chocolate
chips (and nut if using). Drop by small spoonfuls 2-inches apart on
prepared baking sheets. Bake 12-15 minutes, until edges are browned. Makes
about 48 cookies
GUMDROP JEWELS
2 cups Oatmeal Cookie Mix
1 egg, beaten
2 tbsp milk
1/2 cup shredded coconut
1 cup chopped, fruit-flavored gumdrops
Preheat oven to 375ºF. Lightly grease baking sheets. In a bowl,
combine Oatmeal Cookie Mix, beaten egg and milk. Blend well. Stir in
coconut and gumdrops. Drop small spoonfuls onto prepared baking sheets.
Bake 10-12 minutes, until edges are browned. Makes about 30 cookies.
