Mix
4 cups quick-cooking oats
2 cups flour
2 cups whole wheat flour
1 cup brown sugar -- packed
1 cup dry milk
3 tablespoons baking powder
2 teaspoons cinnamon
5 teaspoons salt
1/2 teaspoon cream of tartar
Pancake Batter
2 eggs
1/3 cup vegetable oil
2 cups pancake mix
1 cup water
Recipe
Mix: Combine ingredients in place in an airtight container or 1-quart
canning jar.
Batter: In a large mixing bowl, add eggs and beat well. Gradually beat
in 1/3 cup vegetable oil. Alternately add 2 cups of pancake mix and 1
cup water to the egg mixture; blend well. Cook pancakes on a lightly
greased griddle. Makes about 10 pancakes.
