List of Ingredients
Dough Mix:
1 - 5lb bag Unbleached Bread Flour
8 cups Unbleached All-Purpose Flour
2 cups Stone-Ground Cornmeal
1/2 cup Sugar
1/4 cup + 2 Tbsp Salt
1/4 cup + 2 Tbsp Baking PowderRecipe
In a large bowl, mix above ingredients until they are evenly combined.
Measure 3 cups of mix into a one-quart freezer bags. Seal, label and
freeze.
To Make Dough:
Remove a bag of mix from the freezer and allow it to come to room
temperature. For each bag of mix, add to your bread machine:
1 cup warm water
2 Tbsp cooking oil

1 tsp Active Dry Yeast
Follow the instructions for your bread machine for the dough cycle.
Once cycle is completed, remove the dough from the machine and place in an
oiled bowl (covered) and allow to rest for one hour. Deflate before
proceeding. Each batch makes a 16-20 inch round pizza or use 11x17 inch
jelly roll pan. Spread out the dough on a greased pand and add sauce and
toppings of choice. Bake at 425 degrees for 15-20, until crust is
golden and cheese is bubbly.
To make dough by hand - - - Combine water and yeast in a bowl and allow
to sit about 5 minutes so the yeast will expand. Add the pizza mix and
oil, then knead until smooth and elastic. Once dough is made, cover
well with oiled plastic (or refrigerate) and allow to rest for one hour.
Deflate before proceeding. (Continue with above steps.)
