The mix
8 cups wheat flour
5 cups white flour (use bread flour if you have it)
1 cup powered milk
1/2 cup wheat gluten
1/2 cup white sugar
1 tablespoon cinnamon
1 tablespoon salt
Divide into 5 bags of 3 cups mix each.
To bake
1 bag mix
1 cup water
2 tablespoons molasses
1 tablespoon active dry yeast
1 tablespoon butter
Recipe
Kneed, let rise, punch down, put in pan, let rise again, bake at 350°F
for
35 minutes.
I generally use my old breadmaker to do the kneeding and first rise,
then
put in a breadpan in a slightly warm oven for the second rise, then
bake.
Total time is about 3 hours.
