Middle Eastern Bean Salad

List of Ingredients
3 1/2 cups cooked, drained beans of your choice (or 2 cans red, pinto,
kidney, etc.)
1/2 cup chopped onion
1 large chopped tomato
1 medium chopped cucumber
1/2 cup chopped parsley
1/2 cup vegetable oil
1/4 cup lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon cumin (optional)
Recipe
Mix together oil, lemon juice, and spices in measuring cup.
Combine other ingredients in large mixing bowl.
Add lemon juice and oil to bowl.
Chill several hours or overnight for flavors to blend.
Serves 6
