1 cup yellow cornmeal
1 cup flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon chili powder
1/2 teaspoon dried basil
1/4 cup each green, yellow, & red peppers -- finely chopped
1/4 cup frozen corn -- thawed
1/4 cup margarine
1 cup milk
2 eggs
Recipe
Grease muffin cups. Stir together cornmeal, flour, sugar, baking
powder, salt, chili powder and basil. Set aside. Sauté peppers and
corn in margarine for about 3 to 4 minutes. Beat together milk and
eggs. Mix together pepper-corn mixture and milk mixture with flour
mixture. Bake at 400 for 15 to 20 minutes until golden.
