    2 cups all-purpose flour

    2/3 cup firmly packed brown sugar

    1/3 cup sugar

    1 tablespoon baking powder

    1 teaspoon salt

    1 teaspoon ground cinnamon

    1/4 teaspoon baking soda

    1/4 teaspoon ground ginger

    1/2 cup LAND O LAKES® Butter, melted

    1/2 cup canned pumpkin*

    1/3 cup buttermilk**

    2 eggs, slightly beaten

    Recipe



    Heat oven to 400°F. Stir together all ingredients except butter,
    pumpkin, buttermilk and eggs in large bowl. Stir together all remaining
    ingredients in medium bowl; stir into flour mixture just until moistened.

    Spoon into 12-cup paper-lined or greased muffin pan. Bake for 15 to 20
    minutes or until lightly browned. Cool 5 minutes; remove from pan.

    *Substitute 1/2 cup mashed cooked pumpkin.

    **Substitute 1 teaspoon vinegar or lemon juice plus enough milk to
    equal 1/3 cup. Let stand 10 minutes.

    Yield: 12 muffins
