2 tablespoons margarine or butter
2 tablespoons flour
1/4 tsp. salt
1/8 tsp. pepper
1 cup milk
1 cup (about 4 oz) crumbled cheese (the original recipe calls for
Gorgonzola, but use what you like and can afford: Parmesan and cheddar are
really good on these)
Recipe
Heat margarine over low heat in 3-quart saucepan until melt. Blend in
flour, salt and pepper, Cook over low heat, stirring constantly until
smooth and bubbly; remove from heat. Stir in milk. Heat to boiling,
stirring constantly. Boil and stir 1 minutes. Stir in cheese. Heat over low
heat, stirring constantly until cheese is melted and sauce is smooth.
