4 cups (1 quart) sugar-free, fat-free ice cream, softened
1 (11-ounce) can mandarin orange segments, drained
1 (6-ounce) reduced-fat graham cracker crust
Orange Glaze (optional) [recipe follows]
Garnish: orange rind curls
Recipe
Beat softened ice cream and mandarin oranges at medium speed with an
electric mixer until blended. Spoon into piecrust. Cover and freeze 8
hours or until firm. Serve with Orange Glaze, if desired. Garnish, if
desired.
Yield: Makes 8 servings
Orange Glaze
2/3 cup sugar
1/4 cup water
3 tablespoons orange liqueur
1 tablespoon grated orange rind
2 1/2 tablespoons light corn syrup
Bring all ingredients to a boil in a small saucepan, stirring
constantly; boil 2 minutes. Cover glaze, and chill 2 hours.
Yield: Makes 1 cup
