1 lb. ground beef
1/2 c. chopped onion
1 can (8 oz.) tomato sauce
1 can (8 3/4 oz.) whole kernel corn, drained
1/4 c. water
1 env. sloppy Joe seasoning mix
1 can (10 oz.) refrigerated biscuits
2 T. milk
1/3 c. cornmeal
1 c. (8 oz.) shredded cheddar cheese, divided
Recipe
In skillet, cook beef with onion until meat is
browned; drain. Stir in tomato sauce, corn,
water and sloppy Joe seasoning; cook over med.
heat until bubbly. Reduce heat and simmer
for 5 min.; remove from heat and set aside.
Separate biscuits and roll or flatten each to a
3 1/2" circle; dip both sides into milk and then
into the cornmeal. Place seven biscuits around
the sides and three on the bottom of an
ungreased 9" pie plate. Press biscuits together
to form a crust, leaving a scalloped edge around
rim. Sprinkle with 1/2 c. cheese. Spoon meat
mixture over cheese. Bake at 375° for 20 to 25
min. or until crust is deep golden brown.
Sprinkle with remaining cheese. Let stand for
5 min. before serving. Makes 7 servings.
