Nothing as Too Much Chococolate Pie

1 1/4 cup chocolate chocolate chip cookie crumbs (about 7 to 8)
divided
1/4 cup butter, melted
2 1/2 cup heavy or whipping cream, divided
2 cups semisweet chocolate chips
1/2 cup sugar, divided
2 eggs
3 t. vanilla extract, divided
1/4 t. salt
Recipe
In medium bowl, mix 1 cup cookie crumbs and melted butter. Press into
9"
square pan. Refrigerate until ready to use. In small pan, heat 1 1/2
cups cream
just to boiling. In blender container, mix chocolate chips, 1/4 cup
sugar,
eggs, 2 t. vanilla and salt. Add hot cream and process until smooth,
about 1
minute. Pour into prepared pan. Refrigerate at least 1 hour. In mixer
bowl, mix
remaining 1 cup cream, remaining 1/4 cup sugar and 1 t. vanilla. Beat
until
stiff peaks form. Spread over chocolate mixture. Sprinkle on reserved
1/4 cup
crumbs. Cut into 12 pieces. You don't want to know how many calories
per
serving this has, trust me!
