Beef And Potato Boats

List of Ingredients
4 lg. baking potatoes (8 to 10 oz. ea.)
2 T. butter
1 1/4 t. salt, divided
dash pepper
1/4 to 1/3 c. milk
1 lb. ground beef
1 sm. onion, chopped
6 bacon strips, cooked and crumbed
1/2 c. sour cream
1/3 c. shredded cheddar cheese
Recipe
Wash potato skins and prick with a
fork. Bake at 400° for 60 to 70 min.
or until tender. Allow potatoes to cool
to the touch. Slice a sm. portion off
the top of each potato. Carefully scoop
out the pulp, leaving a 1/4" shell. In a
bowl, mash the pulp with butter, 1/2 t.
salt, pepper and milk; set aside. Cook
the beef and onion until meat in
brown; drain. Cool 10 min. Add bacon,
sour cream and remaining salt. Spoon
into potato shells. Top each with a
fourth of the mashed potato mixture
sprinkle with cheese. Place potatoes on
a ungreased baking sheet. Bake at
400° for 20 to 25 min. or until heated
through. Makes 4 servings.
