Wash the potatoes before you peel, removing any scarred or spoiled
spots,
eyes, sprouts, &the like. Then peel the potatoes and save the skins for
frying.
Frying them in a little oil for about a minute will give you the same
munchy
tidbits that bars &restaurants charge high prices for. Season them with
melted
cheese, soy sauce, nutritional yeast, or an herb mixture, &serve crisp
&hot.
