Chicken Bonne Femme

List of Ingredients
1 fryer -- cut in pieces
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/2 cup oil
2 large baking potatoes -- thinly sliced
2 tablespoons butter
1 large white onions -- thinly sliced
1/2 pound mushrooms -- sliced
1 tablespoon grated Parmesan cheese
1 teaspoon chopped fresh parsley
Recipe
Dry chicken thoroughly and season with 1/2 teaspoon salt and 1/4
teaspoon
pepper. Heat oil in large skillet and fry chicken until cooked.
Remove
from skillet, drain on paper towels, and keep warm. Fry potatoes in
hot oil
until brown. Drain and keep warm. Pour oil out of skillet. Add
butter and
saute onions and mushrooms until onions are soft. Remove and drain.
Assemble chicken on a heated platter. Arrange potatoes around chicken.
Spread mujshrooms and onions over chicken; season with 1 teaspoon salt
and
1/4 teaspoon pepper. Sprinkle with cheese and parsley.
