Chicken Croquettes

3 tablespoons shortening
1/3 cup flour
1 teaspoon salt
1 cup milk
2 cups finely chopped cooked chicken
1 tablespoon minced onion
2 tablespoons minced parsley
2 eggs
2 tablespoons lemon juice
1/3 cup fine dry bread crumbs, unseasoned
Recipe
In a saucepan, melt shortening; blend in flour and salt. Add milk,
stirring. Cook over low heat, stirring constantly, until thickened. Add
chicken, onion and parsley; spread in a greased shallow pan and chill
thoroughly. Whisk together eggs and lemon juice. Form chilled chicken
mixture into 8 logs; dip each into egg mixture, then coat with crumbs. Heat
deep fat to 365°; fry croquettes for about 5 minutes each, or until
golden brown. Drain on paper towels.
Serves 4.
