Chicken Curry

4 chicken breasts
3 cups water
1/2 cup chopped celery
1 cup chopped onion
1/2 teaspoon poultry seasoning
3/4 teaspoon salt
1/2 teaspoon pepper
4 tablespoons butter
2 tablespoons flour
1 1/2 teaspoons curry powder
2 tablespoons mango chutney
2 tablespoons black currant jelly
1 cup chopped apple
1/4 cup raisins
2 cups steamed rice
Recipe
Simmer chicken in water with celery, 1/2 cup onion, poultry seasoning,
1/2
teaspoon salt, and 1/4 teaspoon pepper 30 minutes. When tender, skin
and
debone; reserve stock. Melt butter in skillet; saute remaining 1/2 cup
onion until soft, stirring frequently. Blend in flour and curry powder
and
cook 3 minutes, stirring constantly. Heat stock and add slowly,
stirring
until well blended. Bring sauce to boiling point and simmer 5 minutes
until
thickened. Add chutney and jelly; blend. Season with 1/4 teaspoon
salt and
1/4 teaspoon pepper.
Add chicken to sauce. Cover and simmer 10 minutes. Stir in apple and
raisins; cover and continue to simmer 10 minutes. Serve over rice.
