Chicken Fried Steak & Gravy

2 lbs. round steak
1 egg, slightly beaten with 1 T. water
1/3 cup flour
1/2 t. salt
1/2 t. pepper
1/2 cup shortening
Cream Gravy (recipes follows)
Recipe
Have steak machine tenderized by butcher or pound by hand. Cut steak
into 4
pieces; dip steak into beaten egg for coating. Dredge steak in flour
seasoned with salt and pepper. Have shortening very hot in skillet. Add
steak to hot skillet and brown 1 side. Turn and brown steak on second
side.
Turn heat down to medium and cook according to personal preference,
usually
about 20 minutes. Make cream gravy from meat drippings and serve over
fried
steak.
Cream Gravy: 3 T. grease drippings
3 T. flour
1/2 t. salt
1/2 t. pepper
2 cups milk
Pour off excess grease after frying meat. Keep meat crumbs in skillet.
Leave
at least 3 T. Stir in flour until smooth. Add salt and pepper. As soon
as
flour begins to brown slightly, gradually pour in milk; stir constantly
until gravy thickens. Let gravy boil gently for 4 to 5 minutes while
stirring. If you start making gravy as soon as biscuits are put into
the
oven, both will be done at the same time. Serves 4
