Smothered Chicken

List of Ingredients
3 broiler fryers, cut up, about 2 lbs. each
2/3 cup flour
2 t. salt
1/4 t. pepper
6 T. margarine
1 medium onion, chopped
2 1/2 cup water
Recipe
Shake chicken halves or pieces with mixture of 1/3 cup of the flour, 1
1/2
t. of the slat and the pepper in plastic bag to coat the pieces evenly.
Brown pieces, part at a time in margarine in large skillet. Place in
single
layer in roasting pan. Sauté onion until soft in drippings in skillet.
Stir
in 1 1/2 cups water and the remaining 1/2 t. salt. Heat, stirring
constantly
to boiling. Pour over the chicken and cover. Bake in 350 oven for 1
hour or
until the chicken is tender. Remove to heated serving platter and keep
warm
while making gravy. Blend remaining 1/3 cup flour and 1 cup water until
smooth in a 2 cups measure. Bring liquid in roasting pan to boiling.
Slowly
stir in the flour mixture. Stir constantly until gravy thickens and
bubbles
for 3 minutes. Darken with a few drops bottled gravy coloring, if
desired.
Serve separately to spoon over chicken. Serve 6
