Albanian Rice Pudding

4 cups water
1 cup rice
6 cups milk
2/3 cup sugar
1 t. cornstarch
2 T. water
1./2 t. vanilla
1/2 cup pistachios (blanched, if desired) finely chopped
Recipe
Bring water to boil. Add rice. Cook, uncovered until rice is tender,
about
20 minutes. In medium pan, bring milk to boil. Turn down heat and add
rice
and any liquid. Add sugar and simmer uncovered for 45 minutes. Stir
about
every 10 minute. Stir cornstarch and water together until smooth. Add
to
rice mixture with vanilla. Cook for 15 minutes. STir occasionally.
Spoon in
custard cups and chill. Serve topped with pistachio nuts.
