Baked Chocolate Rice Pudding

2 oz. unsweetened chocolate
4 cups milk
1/2 t. salt
2/3 cup sugar
3 T. long grain rice
Whipping cream (optional)
Recipe
Preheat oven to 300. Butter an 8" square baking pan and set aside. Chop
chocolate into small pieces and put in the top of a double boiler over
hot, not
boiling water. Stir until smooth. Remove from heat. Put all ingredients
in the
prepared pan and stir well to blend. Bake 3 1/2 hours, stirring 3 times
during the first hour of baking so the rice doesn't settle. Serve warm
or cold
with whipped cream if desired. Serves 6 to 8
