CHICKEN SALAD PUFFS

This salad goes really well over a green salad or put in the puffs(recipe below)
List of Ingredients
3 C. finely chopped chicken cooked
2 c. finely chopped celery
3/4 c. mayo
3/4 c. french dressing
1 tbs. parsley optionalRecipe
combine all ingred. mix thoroughly. chill at least ac couple of hours..
makes 6 cups.
little puffs
1 c. sifted flour
1/2 c. butter
1 c. boiling water
4 eggs unbeaten
measure the flour. add the butter to the water in a sauce pan and bring
to a boi. reduce the heat, add all the flour at once. stirring rapidly.
cook and stir until mixture thickens and pulls away from sides of the
pan.about 2 min. remove from the heat , add the eggs 1 at a time beating
thourougly after each one. then beat until the mixture looks satiny.
and breaks off when spoon is raised.
for little puffs drop by teaspoonfuls onto an ungreased baking
sheet about 1 inch a part bake in a hot oven for 30 min. or till done. makes 4-6
dozen little puffs..
with all the directions here for different sizes.. just plop them onto
the baking sheet for the size you want.. and bake till done.. Ilike to
ploop one whole batch together and fill it, it loks pretty, and I
decorate it with different veggies all cut up..
either way the salad is good!
