    4 Cup Chicken -- cooked & chopped finely minced;
    chicken or turkey
    4 Egg(s) lightly beaten
    1 Cup Parmesan Cheese -- grated
    1/2 Cup Bread Crumbs -- dry
    2 Tablespoon Olive Oil or canola oil

    Instructions Directions: Combine all the ingredients well. Use your
    hands to make 12 round or oval patties, 1/2" thick. Heat the oil in a
    skillet. Saute the patties on each side until browned. (This may also
    be
    done under the broiler). Cool thoroughly. Freezing and Cooking
    Directions:
    Freeze in freezer bags or rigid containers. Place waxed paper or
    plastic
    wrap between the slices. To serve, thaw and reheat in a skillet,
    microwave, or oven at 350° for about 10 minutes. For Parmigiana: On the
    day you will eat it, thaw the patties. In a flat bottomed baking dish,
    place 1/2 C. spaghetti sauce. Spread this evenly over the bottom of the
    dish. Place the patties in the pan, one at a time, topping each patty
    with
    2 T. or so of spaghetti sauce, and 2 T. or so mozzarella cheese. The
    patties should overlap each other slightly. Pour as much additional
    sauce
    as you wish over the patties evenly. Top with additional shredded
    mozzarella cheese if you like. Heat in a 350° oven for 30-40 minutes,
    or
    until heated through. Comments: This recipe has become a tradition for
    both of our families. It is delicious, versatile and VERY easy. These
    are
    good as sandwiches or served with gravy and potatoes or ketchup and
    fries,
    and even as Parmigiana. The cooked chicken is easily minced in a food
    processor. A blender and food grinder would do fine, but to do it by
    hand
    would be very tedious.
