CP Mile High Shredded beef Sandwiches

List of Ingredients
3 lb. chuck roast, or round steak, trimmed of fat
2 T. oil
1 c. chopped onions
1/2 c. sliced celery
2 c. lower sodium 98% fat fee beef broth
1 garlic clove
3/4 c. ketchup
2 T. brown sugar
2 T. vinegar
1 t. dry mustard
1/2 t. chili powder
3 drops Tabasco sauce
1 bay leaf
1/4 t. paprika
1/4 t. garlic powder
1 t. Worcestershire sauce
Recipe
In skillet brown both sides of meat in oil. Add
onions and celery and sauté briefly. Transfer to
crock pot. Add broth. Cover. Cook on low 6 to 8
hours, or until tender. Remove meat from
cooker and cool. Shred beef. Remove vegs.
from cooker and drain, reserving 1 1/2 c. broth.
Combine vegs. and meat. Return shredded
meat and vegs. to cooker. Add broth and
remaining ingredients and combine well. Cover;
cook on high 1 hour. Remove bay leaf. Pile into
8 sandwich rolls and serve. Makes 8 servings.
