    2 T. butter
    2 T. flour
    1 cup milk
    1/4 t. salt
    Dash white pepper

    Melt butter in pan. Stir in flour and heat until bubbly. Gradually add
    milk,
    stirring constantly. Add salt and white pepper. Cook until thickened.
    Makes
    1 cup

    Cheese Sauce:
    1 cup cream sauce (above)
    1 cup grated mild cheddar cheese
    1/4 t. salt
    Dash white pepper
    1/4 t. paprika

    Prepare cream sauce. Stir in cheese and heat until cheese melts. Add
    seasonings. Use over vegetables or egg filled crepes. Makes 1 1/2 cups

    Mornay Sauce:
    1 cup cream sauce (above)
    1 egg yolk
    2 T. cream
    1 t. onion juice
    3 T. grated Parmesan cheese
    2 T. grated Gruyere cheese

    Prepare cream sauce. Beat together egg yolk and cream. Gradually add
    egg
    mixture and onion juice, stirring constantly. Cook mixture until it
    just
    begins to boil. Stir in cheese and heat until cheese melts. Use over
    vegetable or egg filled crepes.
    Makes 1 cup
