Nita's Spaghetti Sauce

List of Ingredients
1 or 2 large, flat sweet onions, finely chopped
1 green pepper, seeded and finely chopped
1 yellow pepper, seeded and finely chopped
5 stalks celery, finely chopped
2 Tbsp EVOO (extra virgin olive oil)
3 or more cloves garlic, finely minced (we like 6 or 7)
1/2 lb fresh mushrooms, cleaned and sliced or 1 (4 oz) can, drained
Optional meat ingredient, 1 to 1-1/2 pounds ground and brown, or sliced
and
browned, grease drained
3 (16 oz) cans tomato sauce
2 (6 oz) can tomato paste
2 (16 oz) can diced tomatoes with juice
3 Tbsp Worcestershire sauce
1 Tbsp soy sauce
1 Tbsp dried oregano (3 Tbsp fresh)
1 Tbsp dried basil (3 Tbsp fresh)
1 Tbsp dried marjoram (3 Tbsp fresh)
1 tsp thyme (1 Tbsp fresh)
1 Tbsp Italian Herb (Spice Islands includes the above plus savory,
rosemary
and sage)
2 tsp paprika
1/2 tsp saffron
1 Tbsp brown sugar
2 Tbsp catsup
Salt and pepper to your tastes
Recipe
1. If you want sausage, ground beef, keilbasa, or other type of meat
(salami?) now is the time to brown it and drain the grease. Set aside.
2. Saute vegetables in olive oil. Use a Dutch oven because of volume
and
add the garlic last so it doesn't brown and become bitter.
3. Add meat, tomato sauce, paste, and tomatoes and simmer for a few
minutes
while assembling the remaining seasonings.
4. I use a mortar and pestle to make sure all the herbs and spices are
blended, then add all the seasonings to the sauce.
5. Cover and simmer for 45 minutes to an hour. Makes the house smell
fantastic.
6. Boil some pasta al dente and pour on the sauce. Sprinkle with
Parmesan
or your favorite shredded cheese and serve.
If there is any sauce left, it can easily be packaged up for the
freezer for
up to 6 months with no problem or refrigerated for 3 days.
This works great as a pizza sauce too, with or without the meats.
