Welsh Rarebit Sauce

Makes 8 cups
List of Ingredients
3/4 cup butter
3/4 cup flour
1/2 t. salt
1/8 t. cayenne pepper
1/4 t. dry mustard
1 T. Worcestershire sauce
1 quart milk, scalded
1 pound sharp Cheddar or Old English sharp process American cheese,
grated
2 cups (1 pint) beer
Recipe
Melt butter in top of double boiler over direct heat. Add flour, salt,
cayenne, dry mustard and Worcestershire. Whisk until smooth. Cook over
direct heat until bubbly. Slowly stir in scalded milk; cook until
mixture
thickens. Place over hot water and stir in cheese until smooth. Stir in
beer
just before serving.
