Potato Dumplings with Swiss Cheese

List of Ingredients
4 cups potatoes -- shredded
2 cups flour
1 tablespoon salt
2 quarts chicken stock
16 ham-- cubed (can also use swiss cheese)
Recipe
Grate potatoes. Rinse with water and drain potatoes to prevent
browning. Add flour and salt. Mold into large egg size balls and place
a cube of ham in center of each. Cook in simmering broth, 45 minutes,
until done. Turn dumplings once while cooking. Serve hot dumpoings as
a vegetable dish with melted butter. Garnish with parsley. Or serve in
broth or broth as soup. Serves 8.
