Try cauliflower casserole, made like the hashbrown
casserole only using micro steamed cauliflower.
Broccoli with cheese sauce, or broccoli or cauliflower
using mayonnaise and a bit of cheese to make a fast
golden au gratin topping under the broiler.
Roasted zucchini chunks with whatever veggies are on
hand: mushrooms, cherry tomato halves, garlic,
oregano, red bell pepper, yellow squash chunks.
Corn(on the cob or whole kernel) with cumin and butter
or lime and butter.
Green beans stirfried with a bit of onion, red bell
pepper or pimento and soy sauce.
Green beans with garlic and chopped walnuts.
Stir fry pre shredded cabbage slaw mix with garlic,
green onion, red bell pepper, frozen garden peas,
mushrooms, broccoli florets and ginger and soy sauce.
Make oven fries using a variety of root veggies:
turnips, rutabagas(my picky eater's absolute fave!),
carrots, sweet potatoes.
Can't think of anymore ideas at the moment but these
will certainly turn your 'side dishes' inside out!
April, these are too easy to make...Take a tortilla
and smear it with peanut butter not too thickly. Then
a tablespoon of chocolate chips and fold in half. Use
foreman grill or heated frying pan to brown turing
once if using pan. No oil required. DD and I usually
are quite happy with half one each but sometimes if
the tortillas are especially small we eat a whole one
each. We use whole wheat tortillas, but you could use
flour or corn either one.
