List of Ingredients
1 lb. flank steak or sirloin
Marinade:
1/3 cup soy sauce
1/2 cup sherry
1/3 cup sugar
1 T. liquid smoke
Recipe
Trim fat from meat. Chill steak in freezer for 20 minutes to allow for
ease
in slicing very thin. Cut with the grain, if using flank steak. Place
meat
strips in a plate and sprinkle with marinade. Turn meat strips making
sure to coat
them well with marinade. The marinade ingredients may be warmed
slightly in
the microwave to help dissolve sugar. Transfer meat with marinade to a
plastic
bag and keep in the refrigerator overnight. Cover lower rack of oven
with foil
to catch drips. Lay steak strips across grids of upper rack and bake at
150
to 200 for 3 to 4 hours until dry and chewy. Store in tightly closed
glass
container.
