Chili With Potato Dumplings

List of Ingredients
2 lbs. ground beef
1/2 c. chopped onion
1 can (15 1/2 oz.) kidney beans, rinsed & drained
1 can (15 1/2 oz.) mild chili beans, undrained
1/2 c. chopped green pepper
4 t. chili powder
1 t. salt
1 t. paprika
1 t. cumin seed
1/2 t. garlic salt
1/2 t. dried oregano
1/4 t. crushed red pepper flakes
3 c. V8 juice
Dumplings:
1 c. mashed potato flakes
1 c. all purpose flour
1 T. minced fresh parsley
2 t. baking powder
1/2 t. salt
1 c. milk
1 egg, beaten
Recipe
In a 5 qt. Dutch oven, cook beef and onions
over med. heat until meat is browned; drain.
Add next 11 ingredients; bring to a boil.
Reduce heat; cover and simmer for 30 min.,
stirring occasionally. In a med. bowl,
combine the first five dumpling ingredients.
Add milk and egg; stir just until moistened.
Let rest for 3 min. Drop by T. into
simmering chili. Cover and cook for 15 min.
Makes 8 servings. (2 qts.)
