MAPLE GLAZED CARROTS

1 pound baby carrots
1/4 teaspoon salt
3 cups water
1 tablespoon butter
1 tablespoon maple syrup -- or honey
1/8 teaspoon ginger
Recipe
In a large saucepan, combine the carrots, salt and water. Boil the
carrots
over medium heat for 5 minutes. Pour carrots into a colander and let
drain
until the sauce is ready.
In the same empty saucepan over medium heat, heat the butter, maple
syrup
and ginger. Do not burn this mixture. Add the carrots to the pan, and
gently toss them until well coated with the glaze. Turn onto a serving
platter and drizzle the remaining glaze over the carrots. Serves 5.
