    4 cups cold mashed potatoes
    1/2 cup light cream or milk
    12 soda crackers, crushed, (about 1/2 cup crumbs)
    1 small onion, finely chopped
    1 slightly beaten egg
    1/4 t. celery salt
    1/4 t. pepper
    1/8 t. garlic salt
    Tomato wedges and parsley for garnish (optional)

    combine potatoes, cream or milk, cracker crumbs, onion, egg, celery
    salt,
    pepper and garlic salt in a mixing bowl. Stir together well. Shape
    potato
    mixture into twelve 1/2 inch thick patties. Cook on a greased,
    preheated
    griddle over medium heat or in an electric skillet at 350 for 3 to 4
    minutes
    or until brown on the underside and warm on top.Turn and cook 3 to 4
    minutes
    more or until brown. Keep warm in a 300 oven while cooking remaining
    potato
    patties. Serve the warm potato patties garnished with tomato wedges and
    parsley, if desired. Makes 12 patties
    Note: For crispier potato patties, fry in more cooking oil or
    shortening.
