Zesty Green Beans

1 lb. green beans
2 TBSP olive oil
1 TBSP white wine vinegar
1-1/2 tsp. honey dijon mustard
2 TBSP chopped red onion
1/2 tsp. salt
1/4 cup pine nuts (or sliced almonds), toastedRecipe
In saucepan, boil green beans in 2 quarts salted water for 5
minutes; drain. In bowl, combine oil, vinegar, mustard, onion and salt. In
skillet, cook green beans and mixture for 2 minutes or until heated
through. Add pine nuts. Place green beans on platter and top with extra
chopped onion and pine nuts.
YIELD: 4 servings.
