    Layered Mexican Cornbread

    List of Ingredients




    1 cup cornmeal
    1/2 cup flour
    2 Tblsp. baking powder
    2/3 cups milk
    2 eggs
    1/2 tsp. salt
    1/3 cup veg. oil
    1/2 cup chopped onion
    1 can creamed corn

    Middle Layer:

    1 cup grated cheddar cheese
    1/2 cup jalapenos (Paula uses 1 cup - this might be too much for my taste)

    Preheat oven to 350 degrees. Grease an 8 x 8 or 9 x 9 pan with softened butter; set aside.

    In a large bowl, combine cornmeal, flour, baking powder, milk, eggs, salt and oil. Stir in onion and corn. Pour half of the batter into the pan. Top with cheese and peppers, then pour remaining batter on top. Bake for 35 minutes or until golden on top and a toothpick inserted in the center comes out clean. Let cool slightly, and cut into squares.
