    Moist Banana Bread

    1/2 cup butter
    1 cup sugar
    2 eggs
    1 tsp. vanilla
    1-1/2 cups flour
    1 tsp. baking soda
    1/2 tsp. salt
    1 cup mashed ripe bananas (3 or 4 VERY ripe bananas)
    1/2 cup chopped pecans
    1/2 cup sour cream
    1 tsp. cinnamon

    Recipe

    Preheat oven to 350 degrees. In a large bowl, cream the butter and sugar. Beat in eggs and vanilla. Add bananas, nuts, and sour cream and mix well. In a separate bowl, mix dry ingredients. Pour dry ingredients into the wet ones and fold them together gently until all is moistened. Bake in a greased loaf pan for 1 hour; or in 4 mini-loaf pans for 35 minutes; or in a bundt pan for 45-50 min. (Bundt is my favorite)
