2 cups flour
4 tsp. baking powder
1/4 tsp. baking soda
3/4 tsp. salt
2 Tblsp. chilled butter
2 Tblsp. shortening
1 cup buttermilk (chilled)

* If you don't have buttermilk, simply add 1 tsp. vinegar to 1 cup milk and let sit for 5 min.
Preheat oven to 400 degrees. In a large mixing bowl, combine flour, baking powder, baking soda and salt. Using a pastry blender or a fork mix in butter and shortening until mixture looks like crumbs. Make a well in the center and add chilled buttermilk. Stir just long enough for everything to come together. The dough will be very sticky.
Turn dough onto a floured surface. Dust top with flour and gently fold dough over on itself 5 or 6 times. Roll out to 1" thick. Cut with a 2" biscuit cutter and place on a baking sheet so that they just barely touch. Reform scraps and roll again.
Bake until lightly golden on top (about 15-20 min.)
