Pumpkin Cream Cheese Muffins

List of Ingredients
Cream Cheese Filling:
8 oz. cream cheese
1 cup powdered sugar
(You can eliminate the filling.... they are still delicious)!!
Muffins:
3 cups whole wheat flour
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. cloves
1 Tblsp. plus 1 tsp. pumpkin pie spice (I would cut this down to just 1 tsp. if you use the apple butter as noted below)
1 tsp. salt
1 tsp. baking soda
4 large eggs
2 cups sugar
1 can pumpkin puree
1-1/4 cup veg. oil (I substituted with 1 cup apple butter)
Topping:
1/2 cup sugar
5 Tblsp. flour
1-1/2 tsp. cinnamon
4 Tblsp. cold butterRecipe
Prepare filling.
Preheat oven to 350 degrees. Line muffin pan with paper liners. Mix the muffin ingredients until well combined. Put a small amount in the liners. Add a "dollop" of cream cheese mixture. Cover with more muffin mixture to about 2/3 full. Sprinkle with topping mixture.
Bake for about 18-20 minutes. (a little longer if you're using the giant size muffin pan.)
