    Banana Cream Pie

    1 9" baked pie shell
    3/4 cup sugar
    1/3 cup flour
    1/4 tsp. salt
    2 cups milk
    3 egg yolks slightly beaten
    2 Tblsp. butter
    1-1/4 tsp. vanilla
    2-3 bananas
    Whipped topping (cool whip, whipped cream, etc.)about 2 cups

    Recipe

    In a heavy saucepan, combine sugar, flour and salt. Add milk gradually and stir gently. Cook over medium heat stirring constantly until mixture is bubbly. Keep stirring for about 2 more minutes, then remove from heat.

    Stir a small amount of the hot mixture into the beaten egg yolks, and immediately add egg mixture to the rest of the hot mixture. Return to heat and cook and stir for 2 more minutes. Remove mixture from heat and add butter and vanilla. Stir until it has a smooth consistency.

    Remove about 1/4 cup of the pudding mixture and save for later use.

    Slice enough bananas to cover the bottom of the cooled pie shell. Top with pudding mixture (reserving 1/4 cup).

    Add 1/4 cup pudding to whipped topping and mix until smooth. Spread this over the pie filling.

    You can top with sliced bananas for garnish if you want to, but be sure to dip them in lemon juice first so they won't turn brown.
