The best carrot cake I've ever tasted.
List of Ingredients
3 cups flour
2 cups sugar
2 tsp. baking powder
1 tsp. soda
1 tsp. salt
2 tsp. cinnamon
1-1/2 cups veg. oil
2 cups grated carrots
4 eggs
1 small can crushed pineapple (optional...but makes it GOOD)
2 tsp. vanilla
Recipe
Combine dry ingredients. In a separate bowl, mix oil, eggs, carrots, pineapple and vanilla. Add to dry ingredients. Power into a greased/floured bundt pan and bake at 350 degrees for 1 hour.
Icing:
1 8 oz. package cream cheese
1 box powdered sugar
1 stick butter
1 tsp. vanilla
Cream butter and cream cheese. Add sugar gradually. Add vanilla and mix well. May add a little milk if necessary.
