    Lemon Curd

    This makes a wonderful filling for layered cakes!

    List of Ingredients

    4 large egg yolks
    1 Tblsp. cornstarch
    3/4 cups sugar
    3/4 cups water
    2 medium lemons (grate the peel to equal 2 tsp., then squeeze the juice out)
    2 Tblsp. salted butter, softened

    Recipe

    Blend egg yolks with cornstarch and sugar in a medium non-aluminum saucepan. Place over low heat and slowly wisk in water and lemon juice from 2 lemons. Stir constantly until mixture thickens enough to coat the back of a spoon.

    Remove from heat and add butter and lemon peel.
