    1 white cake mix
    3 large eggs
    1/3 cup vegetable oil
    1-1/4 cups water


    Icing:

    3 cups sugar
    1/4 tsp. cream of tartar
    1-1/2 cups hot water
    1 tsp. vanilla
    2-1/4 cups powdered sugar
    food coloring (optional)

    Line a jelly roll pan (15x10x1) pan with wax paper. Preheat oven to 350 degrees.

    Combine cake mix, eggs, oil and 1-1/4 cups water. Mix cake as directed on package. Pour into pan and spread evenly. bake at 350 degrees for 20-25 minutes, or until a toothpick comes out clean. Immediately turn cake out onto countertop lined with freezer paper (or wax paper would work). Allow to cool, and cut into desired shapes. Put cake bits on a rack over a pan lined with wax paper.

    For icing, combine sugar, cream of tartar and 1-1/4 cups hot water in a heavy saucepan. Cook over medium heat until syrup reaches 226 on a candy thermometer. Cool until lukewarm. Stir in vanilla, and gradually beat in powdered sugar until icing is of good pouring consistency. Tint with food coloring if desired. Pour frosting over cake bites, allowing excess to drip onto wax paper. Icing on the wax paper can be re-used. If it becomes too thick, add a few drops of hot water. Makes about 70 individual petits fours.
