Chicken Pot Pie

My kids really like this, and I enjoy making it for them.
List of Ingredients
1 stick of butter
1/4 cup flour
1/2 tsp. salt
1/2 tsp. pepper
1-3/4 cup chicken broth (1 14 oz. can)
2/3 cups milk
1 cup each of chopped potatoes, onion and celery (3 cups total)
1 cup mixed veggies (like corn, peas, green beans)
3 cups cooked chicken (white meat) chopped
Recipe
Cook two or three chicken breasts (I like to put mine in the crock pot with about 1/2 cup water and let it cook slow while I'm at work - about 8 hrs). Take the chicken off the bone.
Preheat oven to 425 degrees.
In large saucepan, melt 1 stick of butter and saute potatoes, onion and celery for about 5 minutes. Add the 1/4 cup flour and stir until smooth. Wisk in the chicken broth, milk, salt and pepper. Bring to a boil stirring constantly. Remove from heat.
Add the cooked chicken and the remaining vegetables (corn, peas and/or green beans) to the broth mixture. Pour into a greased 9 x 13 pan a bake covered for 15 minutes. Then remove foil and add biscuits to the top and bake for another 15 minutes. (I use Bisquick biscuits, and I like to pre-bake them for a few minutes -- just enough to make the bottoms crusty so they don't absorb too much of the liquid from the chicken pot pie.)
You could omit the biscuits and top with a pie crust instead, in which case you would put the pie crust on and bake for 30 minutes (or until browned).
