    Cream Wafers

    Recipe Introduction

    These make cute little cookies that are fun for parties, showers, etc.

    List of Ingredients

    2 sticks of butter
    1/3 cup heavy cream
    2 cups all purpose flour
    1/4 cup sugar

    Additional sugar (for surface of cookie)

    Filling:

    8 oz cream cheese
    1 stick butter
    1 box powdered sugar
    1 tsp. Almond extract
    food coloring if desired

    Recipe

    To make the cookies, mix the butter, cream, sugar and flour. Chill for 1 hour before rolling to a thickness of 1/8" on a lightly floured surface. Cut into 1-1/2" rounds (or very small heart shapes with cookie cutter), and coat both sides with granulated sugar. Place on an ungreased baking sheet and prick each cookie 4-5 times with a fork (much like you would prick a pie crust). Bake at 375 degrees for 7 minutes until slightly puffy. Cool on wire racks.

    Blend together ingredients for filling. Put filling between two cookies (making little sandwich cookies). Makes about 5 dozen.
