Pumpkin Creme Pies

3 cups flour
1 cup brown sugar
1 cup sugar
1 can pumpkin
1 cup veg oil
2 eggs
1 tsp. baking soda
1 tsp. baking powder
1 tsp. vanilla
1 Tblsp. cinnamon
1 tsp. ginger
1/2 tsp. salt
1/2 tsp. nutmeg
1/4 tsp. ground cloves
Cream Cheese filling:
1 8 oz. cream cheese (softened)
1 stick butter (softened)
1 package powdered sugar
3 drops vanilla
2 dashes cinnamonRecipe
Preheat oven to 350.
Beat together sugars, oil and pumpkin. Add eggs one at a time, following by the vanilla. In a separate bowl, mix together the dry ingredients. Slowly incorporate the dry and the wet until combined.
Spoon into 2 inch circles on a parchment lined baking pan. Flatten with the back of a spoon.
Bake for 11 minutes. Cool on a rack.
Combine all filling ingredients and frost the flat side of a cookie and top with another cookie. Chill.
