    Thumbprint Cookies

    1-3/4 cups flour
    1/2 tsp. baking powder
    1/2 tsp. salt
    1-1/2 sticks softened butter
    1 cup sugar (plus more for rolling)
    1 large egg
    1 tsp. vanilla
    approx. 1/3 cup rasberry or strawberry jelly/jam

    Recipe

    With a hand mixer, whip the butter and sugar until fluffy. Add the egg and beat until combined. Slowely add dry ingredients.

    Scoop the dough into small 1/2" balls and roll in sugar. Place on parchment paper.

    Use the end of a wooden spoon to make an indention in the center of each cookie and fill with jam.

    Bake at 350 degrees for 10-15 minutes.

    Cool on the cookie sheet, then move to a wire rack.
